Fig Sour

Andy Pearson

Andy says...

A really great twist on a traditional whiskey sour

The Mediterranean fig works brilliantly in conjunction with the spice and depth of the Scotch whisky, this is one of those cocktails that works best with Scotch rather than American whiskey.

I created this drink for a Christmas Cocktail feature for the Guardian newspaper in England.

How to make a Fig Sour cocktail at home

Ingredients

  • 25ml Blended Scotch
  • 25ml Briottet Fig Liqueur
  • 25ml Fresh Lemon Juice
  • 15ml Egg White
  • 1 Dash Whiskey Barrel Bitters (or regular Aromatic Bitters)
  • Garnish - 1/4 Fig on the rim

Instructions

  • Pour all the ingredients into a cocktail shaker
  • Dry shake (without ice) to emulsify the egg white
  • Fill with ice and shake again (wet shake)
  • Fine strain into a chilled cocktail (martini or coupe) glass
  • Add the garnish to the rim of the glass

Andy's Top Tip - If figs are not in season you can use dried figs as a garnish instead.
