"Calm thi sen down our kid and av a Bellini" as they say in Yorkshire!

An area of Yorkshire know as the Wakefield Triangle produces the finest indoor forced rhubarb in the world.  After a visit there on a fact-finding mission I decided puree some, add a splash of vanilla syrup and top it up with sparkling wine.  This drink was served at Roast Restaurant & Bar in Borough Market when we opened on 2005 and it became known as the Yorkshire Bellini.

How to make a Yorkshire Bellini cocktail at home

Ingredients

  • 100ml Prosecco
  • 10ml Vanilla Syrup
  • 30ml Rhubarb Puree (For how to make this at home check out my video on making rhubarb puree)

Instructions

  • Pour the ingredients in the order listed into a mixing glass
  • Swirl to combine 
  • Pour into a champagne flute 
  • Job done!
