A wonderfully balanced gin-based raspberry concoction

The signature drink form Julie Reiner's New York bar of the same name.

How to make a Clover Club cocktail at home

Ingredients

  • 50ml Gin
  • 15ml Sugar Syrup
  • 6 Fresh Raspberries
  • 25ml Fresh Lemon Juice
  • 15ml Egg White

Instructions

  • Put all the ingredients into a cocktail shaker including the raspberries
  • Dry shake (without ice) to emulsify the egg white
  • Fill with ice and shake (wet shake)
  • Fine strain into a chilled cocktail (martini) glass
  • Add a fresh raspberry into the glass

Andy's Top Tip - Also try adding 3 mint leaves before shaking to turn this drink into a Clover Leaf.  Also switch the garnish to a small mint sprig instead of a raspberry
