Vanilla Daiquiri

This is my favourite variation on the classic Daiquiri

By simply infusing vanilla pods into Bacardi a totally new flavour is created, I recommend giving this a try

How to make a Vanilla Daiquiri cocktail at home


  • 50ml Vanilla Infused Bacardi
  • 35ml Fresh Lime Juice
  • 15ml Sugar Syrup
  • Garnish - A lime wedge (unless you're minted then use a full vanilla pod)


  • Pour all the ingredients into a cocktail shaker
  • Fill with ice and shake
  • Fine strain into a chilled cocktail (martini) glass
  • Add the garnish into the rim of the glass


To infuse the Bacardi:

Split 2 vanilla pods and place in a Kilner jar or some other air-tight container
Pour in a full bottle of Bacardi
Seal the jar and leave for 7 days in a warm (not hot) place
Give the jar a gentle shake each day
Strain the liquid back into its original bottle through a sieve or cheese cloth to remove the pods 
Feel free to label the bottle so you don't confuse it with regular Bacardi (although the colour will now be different of course)
